Bake real sponge layers in the deck oven - watch the batter rise behind the glass - and turn them out onto a cast-iron cake turntable. Dip the palette knife in buttercream and spread it on; hold the blade steady while the turntable spins and the frosting goes glass-smooth.

Then decorate like a pro:
- Eight piping bags with star, round, leaf and petal nozzles. Squeeze harder for bigger beads, hold still for a rosette, spin the turntable for a perfect border.
- Glossy ganache in dark, white and pink chocolate - pour it at the edge and it runs down the sides in real drips.
- Rainbow sprinkles, pastel pearls and gold pearls that stick wherever they land.
- Strawberries, cherries, blueberries, macarons, chocolate shards, candles and a Happy Birthday plaque that settle right into the frosting.
